All depends on what symptoms you are having?I've just had 10.1.12 a camera jobbie, one up, one down and biopsy for celiac disease. The moment my doc said he was blood testing for wheat/gluten I immediately went gluten free and 90% of my symptoms disappeared.
Tested negative, but definately gluten intolerance,which have mostly the same symptoms as celiacs, but being intolerance is not an *auto immune disease* just huge sensitivity....
It can get expensive to, buying gluten free bread mostly. Best to learn how to bake a few easy things espec like cocount macaroons...

Ingredients
The best way to melt chocolate is to place it in a bowl over a saucepan of boiling water
• 2 egg whites
• 150g caster sugar
• 225g desiccated coconut
• 100g good-quality milk chocolate
• 100g good-quality dark chocolate
Method
1. Preheat the oven to 180°C/Gas 4. Line a baking tray with greaseproof paper.
2. Whisk the egg whites and sugar until frothy, then stir in the coconut and mix well. Use an egg cup to shape the mixture into ‘domes’ and turn these out onto the greaseproof paper. Repeat until all the mixture is used. Bake in the preheated oven for 15–20 minutes or until light golden brown. Remove from the oven and leave them to cool on the baking tray.

here is a list of what you can eat OR not..
you can buy flour substitute from all supermarkets, to make crumble mixs with very little effort, just baking apply, bit sugar, few sultana's. Part cook apples in microwave, mix little cornflower and water, add to apples to get them to 'set' without collapsing.
